
Fire and Ice. The ultimate showdown. Wow, was this combination GOOD! Cube up some watermelon, and add green pepper and as much jalapeño pepper as you can tolerate. (Leave out the seeds and membrane if you want it cooler, add them in if you like heat.) Give it a good stir, and add 2 tablespoons of lime juice, and stir again. Done!

We made this to top chicken tacos tonight. Outstanding! There are no limits to what else you can add to this salsa.

Ingredients
- 2 cups diced watermelon
- 1 large jalapeño pepper
- 1 Tbsp lime juice
- 2 Tbsp minced, fresh cilantro
Instructions
- Dice watermelon.
- Slice the stem end off the jalapeño pepper and discard. Cut pepper in half, lengthwise. Using a spoon, scrape out membrane and seeds. Reserve seeds for later. Discard membrane. Dice jalapeño.
- Combine watermelon and jalapeño in a small bowl. Add lime juice and minced cilantro. Stir well. If more heat is desired, add a few seeds at a time, and stir well.
Notes
The longer a watermelon sits, the more water it will shed, especially if it is sitting at room temperature. Serve it soon after it is prepared.
