We eat fish 3-4 times a week, because there is so many simple, different ways to prepare it! Tonight’s was the easiest dinner yet! Tuesdays are Taco Days, and this week we stuck to plan!
Before dinner, we made cabbage slaw. 3C thinly sliced cabbage, 1C sliced plum tomatoes, 1 bunch sliced green onion, 1/4C chopped fresh cilantro, (or parsley, if you don’t like cilantro,) and for the liquid: 2 Tbsp EVOO and 2 Tbsp fresh lime juice.
We let it marinate for about 20 minutes while we cooked the fish. We used a dry cast iron skillet for 2 pieces of cod, with a dry rub consisting of smoked paprika, chipotle pepper, smoked garlic powder and onion powder. Adjust spices to suit your liking. Turned fish in skillet after 3 minutes, cooked for 3 minutes more.
Topped it with mango, scallions, chopped cilantro and done!
Made chicken tacos last week, and got smarter with the Siggi’s plain nonfat yogurt. Thinned it down with fresh squeezed key lime juice, and put it in a plastic squirt bottle. This way we use less, but get more flavor throughout!
