Citrus and Arugula Salad

Citrus is just starting to appear in the markets again, and we couldn’t be happier. We picked up some blood oranges yesterday. Couldn’t wait for breakfast, so we supreme them and added them to a peppery arugula salad. Our avocado was at the perfect ripeness, so we threw that in, too. A little EVOO and lemon juice was the dressing.

No matter if it’s a summery salad on a chilly November evening. We paired it with grilled swordfish for a perfect match. Our daughter dropped by for a last minute dinner, which made everything even more perfect.

Hug your kids. Tell them you love them. A special friend joined the angels on Saturday. We are heartbroken.

  1. This was my mom, Irene’s special salad for company. She sliced the avocado in long pieces and paired it with sectioned grapefruits.
