We are living in an uncertain world right now. It’s bizarre. We’re trying to stay away from CNN and the other news outlets, but stay generally informed at the same time. We went to the grocery store today, and even though there isn’t one single case of COVID-19 in our entire county, the shelves were strangely bare in places; no frozen vegetables, no paper towels, no soap. And why, on God’s green earth, is there no toilet paper?
So how do we lessen our general anxiety about all this uncertainty? We’re turning off the television, we’re spending time with family, and we’re leaning in to comfort foods.
Greek turkey burgers were fantastic. One pound ground turkey, mixed with 1C thawed, frozen spinach (squeeze out water) and 1/4C feta, and topped with cucumber, red onion and tzatziki sauce. Spectacular!
Two nights ago we made copycat Trader Joe’s Chili Lime chicken burgers. Super easy. A pound of ground, white meat chicken, one tsp chili powder, one tsp garlic powder, 3 chopped scallions, 1/4C diced red pepper, the juice of one lime, and 1/4C whole wheat panko bread crumbs. We topped them with a half-slice of thin-sliced pepper jack cheese. SO good! (And sorry, TJ’s, but these burgers were way better than your original!)
Cozy up with a good book, cook a delicious dinner, and check in on those you love. It’s a very strange world out there these days. xo
