We like to play with our food in the K2.0 kitchen, and by that, we mean we like to change it up, add new ingredients, so we’re not having the same thing again and again. Our favorite Thai restaurant has a deliciously thick and rich peanut sauce. It’s the only reason we order their chicken satay, because the chicken, quite honestly, only serves as a delivery vehicle for that sauce! It’s definitely not K2.0 approved, though, because of the abundant sugar in the peanut butter, plus the sodium in the soy.
I recently discovered a vinegar version of a peanut sauce, and I made it with a packet of Justin’s peanut butter. We love this peanut butter because there are only 2 ingredients: peanuts and oil. No sugar, salt, or additives. You’ll only need 3 ingredients for this sauce:
- 1 packet Justin’s plain peanut butter, which is approximately 1 ounce of peanut butter.
- 1 ounce of coconut vinegar (sub: rice vinegar)
- pinch of cayenne pepper
- warm water.
The formula is simple: Mix together with a fork: equal parts peanut butter and vinegar, a pinch of cayenne, and then, enough warm water to create the consistency of the sauce you desire. We were drizzling it over chicken, sautéed onions/peppers and quinoa, so we wanted it on the thinner side. It made approximately 1/4 cup of sauce. A little crushed red pepper on top, and BAM! Dinner goes from drab to fab!
You could add low-sodium soy sauce or liquid coconut aminos for a more traditional peanut sauce, but we liked it just the way it was.
This recipe came to me via a Live Instagram event, starring my rock star sister-in-law, Jane Monzures Clauss, and her amazing friend and colleague, DJ Blatner. Tangy, Healthy Peanut Sauce
- 1 packet Justin’s Peanut Butter
- 1 oz coconut vinegar
- 1 pinch cayenne pepper
- 1 Tbsp warm water, to thin the sauce.
- Whisk together the first 3 ingredients. Then add warm water, a few drops at a time, until the desired consistency is reached.
