Apple Cabbage Slaw

Slaws are one of the easiest salads to make, and certainly the most versatile. Anything goes! We put this simple slaw together to enjoy one night with a burger, the second night as a base for our tacos, and the third day we topped open-faced turkey sandwiches with the remainder.

We started with a head of green cabbage and shredded it with a 12″ chef’s knife. We added shredded carrot, thinly sliced red onion, and diced Fuji apple. The dressing was light mayonnaise combined with nonfat yogurt, honey, apple cider vinegar, white wine vinegar and poppy seeds.

Quick, simple, and delicious. The stats are on point, too.

One of the most compelling uses of apple cider vinegar is helping treat Type 2 diabetes. Type 2 diabetes is characterized by high blood sugar levels caused by insulin resistance or the inability to produce insulin.

I have a friend who takes a shot of apple cider vinegar every morning. No thanks, but we use it in salad dressings and in sauces every day! We buy organic, unfiltered apple cider vinegar which contains a substance called “the mother,” which consists of strands of proteins, enzymes, and friendly bacteria that give the product a murky appearance.

Make some cabbage slaw today! Add your favorite mix-ins: fresh pineapple, Reduced-Sugar Craisins, walnuts, almonds, broccoli slaw, fresh, cubed pear, mandarin oranges, or even dragon fruit. Sub the raw honey for Mike’s Hot Honey, for a kick of chili spice. (That stuff is the bomb!) There’s no wrong way to make slaw!

Apple Cabbage Salad

  • 4 C Shredded green or red cabbage
  • 1 large Fugi apple
  • 1 large carrot

For dressing:

  • 1/4 C Light mayonnaise
  • 1/4 C Plain, nonfat yogurt
  • 1 Tbsp Raw, clear honey
  • 3 Tbsp Apple cider vinegar
  • 1 Tbsp White wine vinegar
  • 1 tsp Poppy seeds


  • Shred cabbage and chop apple into small pieces. Julienne carrot into matchsticks. Place all into a large bowl.
  • Combine dressing ingredients in a bowl and whisk well.
  • Add dressing to salad and mix well. Chill for at least an hour before serving.
