Burrito Bowls

Burrito Bowls are the answer to everyone’s favorite meal, because they are countertop customizable. Toss the week’s produce prep out on the kitchen island, cook up a protein, and … ¡ahí está! Dinner!

Black beans, fresh tomato, sautéed onion, fresh avocado, homemade salsa, brown rice, chicken spiced with cumin, and scallions. A squirt of fresh lime over the top. Nothing revolutionary, but when it all gets together, it’s a party in your mouth! The options are endless.

  • Grilled Shrimp
  • Roasted fresh corn

It’s really anything you want it to be. Our kids call them “Rice Bowls,” when the ingredients start to drift away from a Mexican theme. Whatever you call them, they’re delicious! The bowl above was my husband’s plate. Keeping it K2.0 compliant, we chose not to have cheese and used fresh salsa as our “dressing.” My bowl omitted the rice and I chose a smaller portion of beans for my healthy carbohydrates, to keep the carbs lower than 20g for the bowl.

These are our favorite brand of black beans. I get them at Whole Foods. They are a great pantry staple, and they are the only “no salt added” brand that I have found in our area.
