Roasted Garlic Goat Cheese with Chives

Roasting garlic is the easiest way to elevate any meal. We love roasted garlic spread on our homemade pizza crust in place of tomato sauce.
- 1 bulb garlic, unpeeled
- 1 Tbsp olive oil
- 8 oz goat cheese
- 1 tsp clear organic honey
- 1 tablespoon minced, fresh chives
Preheat oven to 300º.
Slice off the top of the garlic bulb, to expose the tops of the cloves.
Make a tin foil "nest" around each bulb of garlic you are roasting. You will be folding the foil up over the garlic in the next step, so tear off enough foil to do this. Drizzle one Tablespoon of olive oil over each garlic bulb. Then pull up foil to cover each bulb tightly. Keep bulbs upright and place them in a casserole dish to bake.
Place dish in oven and set timer for 1 hour. Put goat cheese on the counter to come to room temperature while the garlic roasts.
Remove dish from oven. Let bulbs cool for at least 30 minutes. When they are cool to the touch, remove foil and squeeze the soft garlic from each clove into a bowl.
If you are roasting only one bulb of garlic, mix the goat cheese, honey and chives into the one clove of roasted garlic. If you are roasting multiple bulbs of garlic, save out one bulb for this recipe, and put the extra roasted garlic into ice cube trays to freeze for later use.
Place mixture on cling wrap and roll it to shape the mixture into a log. Refrigerate for at least 1 hour. When serving, slice off a one-ounce round medallion per person.
