Apple Cabbage Salad
- 4 C Shredded green or red cabbage
- 1 large Fugi apple
- 1 large carrot
- 1/4 C Light mayonnaise
- 1/4 C Plain, nonfat yogurt
- 1 Tbsp Raw, clear honey
- 3 Tbsp Apple cider vinegar
- 1 Tbsp White wine vinegar
- 1 tsp Poppy seeds
Shred cabbage and chop apple into small pieces. Julienne carrot into matchsticks. Place all into a large bowl.
Combine dressing ingredients in a bowl and whisk well.
Add dressing to salad and mix well. Chill for at least an hour before serving.
